Ingredients

  • 1 cup rolled oats (blended to flour)
  • 1 tsp baking powder
  • 1 large egg
  • ¾ cup buttermilk (or milk + lemon)
  • 1 tsp Zindagi Stevia Powder
  • ½ tsp vanilla extract
  • A pinch cinnamon
  • 1 tsp coconut oil or butter (for pan)

Method

  1. Make oat flour: Blend rolled oats in a food processor for 30 seconds until a fine flour forms.
  2. Mix dry: Combine oat flour, baking powder, Zindagi Stevia Powder, and cinnamon in a bowl.
  3. Mix wet: Whisk together egg, buttermilk, and vanilla in a separate bowl.
  4. Combine: Pour wet ingredients into dry and stir until just combined. Don't overmix — small lumps are fine. Rest batter 3 minutes.
  5. Cook: Heat a non-stick pan over medium heat. Add a little coconut oil. Pour ¼ cup batter per pancake. Cook until bubbles form (2–3 min), flip, cook 1–2 min more.
  6. Serve: Stack and serve with fresh berries, a drizzle of honey, or a dusting of cinnamon.

Tip

For extra fluffiness, separate the egg, whip the white to soft peaks, and fold it in last.
