Ingredients
- 3 cups rolled oats
- 1 cup mixed nuts (almonds, cashews, walnuts)
- ½ cup pumpkin and sunflower seeds
- 3 tbsp coconut oil, melted
- 1½ tsp Zindagi Stevia Powder
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ cup dried cranberries or raisins (added after baking)
Method
- Preheat: Heat oven to 160°C (325°F). Line a large baking tray with parchment.
- Mix dry: Combine oats, nuts, seeds, cinnamon, and Zindagi Stevia Powder in a large bowl.
- Add wet: Pour melted coconut oil and vanilla over the dry mixture. Toss thoroughly until everything is coated.
- Spread & bake: Spread evenly onto the tray in a thin layer. Press down slightly — this creates clusters. Bake 20–25 minutes, stirring once halfway.
- Cool: Remove when golden. Let cool completely on the tray without stirring — this is what creates the crunchy clusters.
- Add dried fruit: Once fully cool, mix in dried cranberries. Store in an airtight jar for up to 2 weeks.
Tip
Don't stir while it cools — the undisturbed granola binds into satisfying crunchy clusters.
